A good fish to fish in the Endwalker expansion is the Shallows Cod. They can be found under the water south west of the Great Work Aetheryte. They are a medium sized fish that you catch by spear fishing. They sell well because they are used in multiple high level crafting recipes. Below is a video showing the location of the fish.
