A good way to make money through combat is by killing Gelatos and Sorbets for Gelato Flesh. They can both be found in Coerthas Western Highlands and are used in crafting. They tend to have good value because it can be a pain to gather them so most people just buy them. If your a high level you can normally kill them in 1 or 2 hits which makes it easier. The flesh drops even more frequently if you have another person in your party helping you. So if you have a friend and you both want to earn some money this way you can make more money then if you did it alone. Below is a video showing the location. It isn't in this video but sometimes a FATE appears near the Sorbets where you can kill a bunch and they seem to drop more frequently during the FATE.
